Lazy mornings are something we all experience regularly (if not on a daily basis!) On these days, the urge to pick up and prepare a pre-packaged meal is undeniably strong. However, most of these ready-made foods contain a ton of preservatives and added sugars which, in the long run, can be extremely detrimental to your health.
These pillowy soft, melt-in-your-mouth pancakes can be whipped up in no time by combining the most readily available pantry ingredients. So jump on board and fill your kitchen (and tummy) with the sweet aromas of these 15-minute pancakes to kickstart your day in the perfect way!
This recipe makes 5 medium sized pancakes.
Ingredients:
62.5g flour
1/8 tsp baking soda
1/4 tsp baking powder
A pinch of salt
2 tbsp whisked egg
12.5g butter, melted
½ tsp vanilla essence
70ml milk
1/8 tsp vinegar
15g sugar (use 25g sugar if you want your pancakes to be on the sweeter side)
Method:
In a small bowl, add the milk and vinegar and stir to combine. The vinegar helps to curdle the milk creating a slight acidic flavour in the pancakes to balance out their sweetness.
Add the flour, baking soda and powder, sugar and salt to a large bowl and whisk them together until well combined.
In a separate small bowl, crack one egg and whisk well. Once whisked, measure out 2 tbsp and add it to the dry ingredients.
Next, add in the melted butter, milk and vanilla essence.
Combine all the ingredients with a whisk until a smooth, lump-free batter forms.
Heat a non-stick saucepan and add ½ tsp of unsalted butter to it.
Spoon one ladle of the pancake batter onto the saucepan and cook on medium heat until several tiny bubbles form on the upper surface of the pancake.
Flip the pancake after its top has set completely and cook on the flip-side for 30 seconds.
Serve hot and customize with toppings of your choice!
NOTE: The pancake batter cannot be made ahead of time as the air bubbles that form as a result of the ingredients reacting with one another will deflate and your pancakes will turn out dense and chewy.
